              Xam Tai Region - Honey Process
Our 2024 crop offers the first Honey Process coffee we’ve ever offered from Xam Tai Region! Honey processing highlights a unique coffee production method in which coffee peels are removed immediately upon harvest, while the sugary pulp remains intact during the drying process. The sticky coffee seeds are sun-dried as the sugars impart their natural sweetness to the final product, visibly giving the coffee a reddish-brown, honey-like hue. The result is a coffee with a complex, fruity, and sweet flavor while maintaining a pleasant body, reflecting the unique environment of the Xam Tai Region and appealing to those who appreciate nuanced coffee.
